| The commercial convection oven
is a professional kitchen baking device designed for commercial
baking and catering scenarios. It features elegant appearance,
precise temperature and time control, steam cyclic heating,
large capacity of 10 trays and good safety protection. It can

cord. Please let a professional electrician conduct wiring
operation, and ensure reliable grounding.
2. Keep the machine away from
the flammable and explosive materials. Reserve a sufficient
ventilation space between the machine and wall.
3. Do not touch the oven
surface during high-temperature operation. Do not put hands into
the machine during operation.
4. Do not frequently open the
oven door during operation.
5. Wear protective gloves and
other protective equipment when taking and placing the baking
trays.
6. Cool the oven down
completely before cleaning and maintenance.

Temperature Controller
The temperature controller adopts the digital display and knob
control design, achieving precise setting and clear display of
the heating temperature in the range of 0-350˚C (32-662˚F),
avoiding complex button operation, and meeting different
temperature requirements of various foods.

Time Controllers
The independent switches and timing
modules are designed for baking and steam functions, allowing
the baking mode and steam mode to be separately started, and
achieving different baking effects. The digital display timing
has high precision and low error and achieves real-time
monitoring.

Circulating Fans
The double circulating fans are
designed for forming 360˚ hot air circulation, evenly
transferring the heat generated by the heating tubes to all
corners of the oven, ensuring the temperature deviation is
lower, the baking consistency and the heat utilization rate are
higher.

Tray Support
The oven can hold 10 large trays
with the size of 40*60cm at the same time, and the trays can be
stably supported by the supporting plates. The tray support
adopts the detachable design, facilitating distance adjustment,
cleaning and maintenance.

Oven Door
The tempered
glass door body is resistant to high temperature and impact,
allowing frequent opening and closing operation and reducing the
safety hidden danger while facilitating real-time observation of
the baking state. The anti-scald handle is ergonomic,
comfortable and safe.

Universal Wheels
The
universal wheels are wear-proof and corrosion-proof, can easily
bear the weight of the oven in the full-load state, and allow
the oven to freely move in different working environments. The
brake design ensures the oven is fixed stably, and avoids
accidental movement during operation.

1. Connect the oven to the 220V 3-phase power source, and the
power indicator is on.
2. Then turn on power, and the
oven starts working.
3. Turn on the fan switch, and
then the fan indicator is on.
Attention: The fan has two selections: ‘AUTO’ and ‘MANUAL’. On
the ‘AUTO’ stage, the fan will stop working when you open the
door. On the ‘MANUAL’ stage, the fan continues working when you
open the door. Be carefully when the fan on the ‘MANUAL’ stage
in case of burnout. The fan can rotate by turns clockwise and
counterclockwise. The fan rotates for 3minutes clockwise then
for 3 minutes counterclockwise. The default time delay between
clockwise and counterclockwise rotation is 10 seconds.
4. Temperature setting: Be sure
to set the temperature after turning on the fans. The heater is
controlled by the temperature controller. The oven starts
heating after setting temperature. The alarm is given if the
ignition fails. And then we must reset the temperature to
default, and then set temperature to reignite again. The red
indicator of temperature controller is on, which indicates the
oven already starts working. When the green light is on, it
indicates that the chamber temperature has reached to the set
temperature. Then the temperature controller is disconnected
automatically. The digital display of the temperature controller
shows the actual chamber temperature.
5. Steam switch: Turn on the
steam switch when we need steam. The steam timer shows the steam
time. Steam time= Spray time+ Time interval. Set the steam time
according to your actual need, the longer the time is, the
bigger the steam is. The oven will spray steam at intervals in
set time. And the steam indicator will flash once when it
sprays. It will spray steam for 0.5 seconds by 10 seconds
interval till the steam setting time is over. Then the spray
will stop by itself.
6. Time setting: Turn on the
baking timer when we need to set the baking time. Meanwhile, the
timer indicator is on. It bakes by manual if we did not set the
baking time.
7. Baking effect: There is a wind
flue on each layer, you can adjust the wind angle and volume by
the adjustor which is located under wind flue. Adjust the
adjustor to upside a little if the fire is too large,
controlling the fire by the wind volume.
